Trust Me, This is Eggcellent !

Eggs, or chicken eggs as we know them is probably one of the most consumed food ingredient of the world and for a good reason too !

ONLY 70 CALORIES PER EGG, ZERO CARBS and NO SUGAR which means you can eat a solid and wholesome breakfast without feeling guilty. They are the least expensive source of high quality protein at 6 gms/egg.  Egg yolk contains choline , a essential nutrient required in the early years of life for brain development and helps cell formation.

Eggs contain 13 essential vitamins and minerals . The high quality protein in an egg does well to build and maintain a lean body while keeping hunger at bay.

It facilitates weight loss and help with weight maintenance too. People complain that Eggs are high on cholesterol and contains 212mg/egg which is over half of the daily recommended daily intake of 300 mg but the egg white is practically free of cholesterol making it well balanced. 

It’s however important to ensure the eggs are safe to eat and protected from salmonella contamination. Eggs must ideally be bought fresh and from a know source and kept refrigerated. Cooked eggs are always safer to eat than the raw ones and there is no significant change in the nutritional value of the eggs even after cooking.

Egg are among the few foods that one can classify as Super Food .

As far as it’s culinary advantages there is probably no other food ingredient  that can create the right excitement for a chef or home cook.. It’s use in the kitchen in various forms is well documented and it can be used both in savoury and dessert products, be it Starters, Soups Curries ,Mains , Stews , Pies, Custards ,Mousse ,Soufflés ,Cakes, breads etc.

Eggs are also used in Binding,Coating,Glazing, Emulsifying ,Clarifying, Enriching and Aerating. Bakery & confectionary production till the more recent introduction of the egg-free pre-mixes was unthinkable without the humble egg.

It is still the fastest quick fix meal to handle last minute guests or for us at our homes, with the quintessential Bread & Anda Burji or just the good ol’ omelette !

I just love eggs as you may have figured and today I will share two of my favourite dishes that are easy to make and heavenly to taste : 

Devilled Eggs with Paprika and Dill : Image for representation only

Thai Style Devilled Eggs:

To Serve 6 Persons.

Ingredients:
Eggs 6 nos
Mayonnaise 60 gms
Dijon mustard 10 gms
Sriracha 5 gms
Lime juice 15 ml
Scallions 15 gms
onion 50 gms
Peanut oil 75 gms
Coriander leaves 12 nos
Red chilly (chopped) 1 nos

Method:
Slice the onions, heat oil in a pan and fry the onion till crisp..Cool
• Hard boil the Eggs. Cool them in ice water, Shell and cut them in halves, Scoop out the egg yolks, leaving the egg white intact.
• Smash the yolks with a back of a fork, add the mayonnaise, mustard, finely chopped scallions, Sriracha and salt. Mix well till you get a nice smooth paste.
• Spoon the egg mixture in a piping back and fill the egg whites. Garnish with fried shallots, cilantro leaves and chopped red chilly.

Served Chilled

Italian Baked Eggs:

To Serve 4 Persons

Eggs 4nos
Olive oil 15 ml,
Capsicum ( chopped) 40 gms
Onions ( chopped) 40 gms
Garlic ( chopped) 10 gms
Tomatoes 200 gms
Mozzarella(grated) 100 gms
Salt/pepper to taste
Basil leaves 10 nos
Method:
• Set the oven at 180 deg celsius
• Roughly chop tomatoes
• Heat oil in pan and saute onion,peppers & garlic till tender. Stir in the tomatoes and cook for 5 to 7 minutes. Add the salt & pepper as desired
• In a flat glass bowl or a ramkin, pour the sauce at the base, crack the eggs on top of the sauce, sprinkle the grated mozzarella and bake for 12 to 15 mins till the egg whites are firm and the egg yolks still runny.
• Garnish with fresh basil and serve immediately.
