Roasted Strawberry Ice-Cream

Ingredients: 1L full fat milk, 400ml fresh cream, 190gms sugar, 400gms strawberries-chopped, 3 tbsp balsamic vinegar

Procedure:

  • Place milk in a pot and allow it to come to boil. Once it reaches boiling point,
    continue stirring it constantly and boiling for another 15 mins.
  • Then add the cream and 180 gms sugar. Keep stirring and allow it to come to a
    boil again and turn heat off. Let cool completely.
  • Preheat oven to 180 deg Celsius.
  • In a cookie sheet or any flat dish, add the chopped strawberries with the
    remaining 10 gms of sugar and balsamic. Toss to make sure everything is well
    mixed.
  • Roast in the oven for about 20 mins.
  • Once cooled, purée the strawberries and any syrup left in the pan. Add this
    purée to the cooled milk mixture.
  • Let this mix chill thoroughly. Preferably overnight. Add to your ice cream
    maker and churn according to manufacturer’s instructions.

Chocolate Chips Ice-Cream

Ingredients: 1L full fat milk, 400ml fresh cream, 180gms sugar, 40gms cocoa powder, 40gms choc chips

Procedure:

  • Place milk in a pot and allow it to come to boil. Once it reaches boiling point,
    continue stirring it constantly and boiling for another 15 mins.
  • Then add the cream, sugar and cocoa. Whisk well. Allow it to come to a boil
    again and turn heat off.
  • Chill this mix overnight in the fridge.
  • Churn in your ice cream maker according to manufacturer’s instructions.
  • Once ice cream is churned, fold in the choc chips and serve.

Alphonso Mango Ice-Cream

Ingredients: 1L full fat milk, 400ml fresh cream, 180gms sugar, 250gms Alphonso mango purée (aamras)

Procedure:

  • Place milk in a pot and allow it to come to boil. Once it reaches boiling point,
    continue stirring it constantly and boiling for another 15 mins.
  • Then add the cream and sugar. Allow it to come to a boil again and turn heat
    off.
  • Once the milk mix is completely cooled, add the mango purée. Do a taste test
    to check on the sugar. If mangoes are not sweet enough, you may have to add
    some more sugar.
  • Chill overnight. Churn in ice cream maker according to manufacturer’s instructions.

Rajbhog Ice cream

Rajbhog Ice-Cream

Ingredients:1L full fat milk, 400ml fresh cream, 180gms sugar, 0.5gms saffron (kesar), 30gms mixed nuts like almonds, cashews and pistachios

Procedure:

  • Place milk in a pot and allow it to come to boil. Once it reaches boiling point,
    continue stirring it constantly and boiling for another 15 mins.
  • Then add the cream, sugar and saffron . Allow it to come to a boil again and
    turn heat off.
  • Chill overnight. Churn in ice cream maker according to manufacturer’s instructions.
    Once churned, fold in the mixed nuts.
