Microbreweries all over the word are coming up with innovative ways to use spent grain, the leftover malt after the mash has been extracted for its protein, sugar and fibre. The spent grain is still rich in fibre and nutrients that don’t get used up.
Pune365 Reader Exclusive : Chef Ubeid of TJ’s BrewWorks has shared some of his innovative dishes on using spent grain. “Spent grain can be used in so many ways. You can use the crumbs to coat chicken or onion rings that can be fried or you can dry it out to make a dough of it. Bread made from spent grain tastes great!”
Spent-crusted Cheese and Jalapeno Poppers
These round crispy poppers make for a great appetiser that is filled with soft melting cheese on the inside. Though delicious, these poppers are easy to prepare. You’ll need pickled jalapenos and a mix of cheese like cheddar and mozzarella that’ll easily melt once fried. These ingredients need to be stuffed into a bread mould that needs to be crusted with spent grain crumbs. You can find this dish in the new spent grain menu at TJ’s BrewWorks.
Spent Grain Pelmeni
The Spent Grain Pelmeni is a twist given to the signature Russian dumpling with a warm filling. The pelmeni dough is made from spent grain which has been dried out and then ground. The spent grain dough still contains a lot of fibre and nutrition. The pelmeni can be stuffed with minced vegetables or chicken. The dumpling can either be steamed and added to broth or it can be stir-friend and eaten like a wonton.
Spent Grain Ravioli
Spent grain dough can be used for a number of different things. The spent grain dough can be turned into a ravioli stuffed with spinach and cheese. The ravioli can be steamed and cooked in a spicy and tangy marinara sauce. The ravioli can also be cooked in a creamy béchamel sauce with mushrooms and corn added to it.
Spent Grain Cookies
Another delightful addition is the warm caramalt cookie sandwich. These cookies are rich in their fibre and nutrition. They taste even better with chocolate chips added to them. The spent grain flour is added to all the necessary ingredients to make a dense cookie dough. The cookies are then baked to perfection and served with vanilla ice-cream.
